My mother and I were talking the other day about how life would be different if we lived next to each other.

Right now, we stay about 3 hours apart - close enough to be able to drive and visit often, but it’s far enough away that you can’t hold coffee together at will. But that's what we were talking about. It would be so much fun to be close enough to hold lunch together automatically! Or pop for a glass of wine back deck. Or bribe my father with cookies if they come to help me get a new sofa. Or buy it together. You know, everyday random things… together!

Of course, our time to share where they are here or where I am is great. But we always see each other during the weekend or a few days back, and you can't help but feel the pressure to get into All Things while we're in the same house at the same time. The same is true of any long-term relationship. And we both have big roots in both of our cities, so I don’t see that changing anytime soon. So we talk a lot on the phone, enjoy our face-to-face time when we can, and take full advantage of that. You know, as you do three hours apart. :)

Sadly, I was arrested in Kansas City this Sunday and will not be able to reach Wichita on Mother's Day this year. But you can bet your bottom dollar that if I had stayed there, I would have skipped going to them very early in the morning and made him a surprise start to the day - this cheese, sausage, sweet potatoes, snacks (and Easy to prepare the night before!) A simple breakfast casserole. She may be a little surprised, and she may notice that it is not so simple and healthy breakfast she is used to eating, and then she walks in.

requests over the years for basic breakfast. And for special occasions or even any day when you feel like a delicious breakfast, this classic recipe is guaranteed to start your day with a smile.

I’ve done it (or its kind) countless times over the years whenever I need fast and easy food to serve the crowd. And I can attest that while it is a direct delight to the crowds, it is also a pleasure for the chef because it is so easy to make. If you do not want to get up early for breakfast, you can prepare it the night before and throw it in the oven the next day. Winning for you, and winning for your guests (or your mom!)
Steps to make it easier. Just roast some sausage. (I highly recommend using the “hot” Italian sausage, as it will help flavor the whole casserole.) Then toss the onions, garlic, and red peppers. (Or you can use a pot of roasted reds.) Add the sliced ​​eggs, milk, and cheese, and toss with the potatoes until combined. Then place it in a baking dish and cook until the potatoes are tender.
And top with green onions, if you would like more color. Or chopped avocados can also be enjoyed.

Then eat it (and find those eggs that have settled down and baked).

DEFINITION

This simple sausage, egg, and hash casserole is easy to make, and always delights the crowd!
INGREDIENTS
  • 1 kg sausage (I like hot but small or delicious will work)
  • 1 medium white onion, peeled and chopped
  • 3 cloves garlic, crushed
  • 1 red hot pepper, cored and diced (or 1 pot red fried pepper, lightened and chopped)
  • 6 eggs
  • 1/3 cup milk
  • 1 bag (20 ounces) in a frozen bag made of hash browns
  • 2 cups shredded sharp cheddar cheese
  • 1/4 teaspoon fresh black pepper
  • Optional topping: chopped green onions
INSTRUCTIONS
The oven is preheated to 375 ° F.

Add the sausage to a medium saute pan. Cook over medium heat until brown, crushing the sausage with a spoon as it cooks. Remove the sausage with a chopped spoon and transfer to a large mixing bowl. Keep about 1 teaspoon of sausage grease in a saute pan, discarding everything else.

 Put the onion and red pepper * in a saute pan and sauté for 5 minutes until cooked through. Add the garlic and simmer for an additional 2 minutes until it smells good. (If you are using a roasted red pepper, wait for it to shake until the back of the garlic.) Pour the vegetable mixture into a mixing bowl with the sausage. Place the brown hash and 1/2 cups of cheese in a mixing bowl with sausage and vegetables. Combine integration.

In a separate bowl, combine eggs, milk, and black pepper until combined. Then add them to the hashbrown blend, then renew the blend. Pour the mixture into an 11 × 7-inch or 9 × 9-inch baking dish (a 9 × 13-inch bowl will also work), and top with the remaining 1/2 cup of sliced ​​cheese. Cover with aluminum foil and bake for 30 minutes. 

Then remove the aluminum foil and bake for another 10-15 minutes until the potatoes in the center are cooked. (I recommend that you use a fork to pull out one of the potatoes in the middle of the casserole, and inspect it to see if it is soft and cooked). Remove and allow the casserole to rest for 5 minutes. Sprinkle with green onions and serve!

NOTES

* Updates: Some of you have reported back that your casserole took about 45 minutes (in total) to bake, so I reviewed the recipe instructions accordingly. Usually, just look at the casserole while baking, and when the potatoes are tender, it’s ready to go!
